Den före detta mtb-cyklisten Matteo Gori har sitt ekologiska jordbruk i världsarvet Val d‘Orcia i södra Toscana. Förutom vinrankor odlas olivträd som redan fanns på plats när Matteo slog till på marken för cirka tio år sedan. Olivträden består av de lokala sorterna frantoio, oriolo och leccino. Oliverna pressas några timmar efter skörden som sker med hjälp av familj och vänner.
